The Waldorf FN8130G-HPO is a 600mm wide single pan gas fryer from the 800 Series, designed for high-volume commercial kitchens that demand consistent output and low operating costs. At the heart of this fryer is a patented High Performance Output (HPO) infrared burner system comprising two 70MJ/hr ceramic fibre burners driven by an innovative blower that forces increased volumes of air and gas through the burners. This technology maximises heat absorption into the cooking oil, resulting in a production rate of up to 50kg/hr while simultaneously reducing flue exhaust temperatures and lowering the cost per kilogram of food fried.
Constructed from 304 stainless steel and manufactured in New Zealand, the FN8130G-HPO features a 31-litre open V-tank pan with a large capacity cool zone to protect oil quality and extend its usable life. Mechanical thermostatic controls keep operation straightforward for busy kitchen staff, and the open pan design simplifies daily cleaning, routine maintenance and servicing. The fryer is supplied ready for use with either two large baskets or three standard baskets, and is compatible with both natural gas and LPG supplies via a 3/4" BSP male gas connection.
